Herbed Salmon Burgers

Ingredients:
2 medium potatoes
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh parsley
12 ounces cooked fresh salmon or canned
1 egg
1 egg white
Directions:
Bring a medium pot of water to a boil. Peel and cube the potatoes.Simmer the potatoes until tender about 20 minutes.Drain and place in a medium mixing bowl and mash with a fork.Add the lemon juice,dill,parsley,and salmon.Mix well.
In a small mixing bowl, whisk the egg and egg white until foamy.Add to the salmon mixture and fold until combined.Form the mixture into patties using BurgerMate.Cover with plastic wrap and refrigerate for 30 minutes.Bring the grill to a medium-high heat.
Place the salmon patties on the grill and cook for five minutes on each side.Serve on white toast or other light bread.
