1. The reason it gets stuck is because either you don't leave it on the pan long enough or the pan is not hot enough, period.  My guess is that it's the latter.  And you should NEVER cut into a piece of meat to see if it's cooked right.  You should press against it to see what kind of resistance it has against your finger.  The more it is cooked, the more resistance it will give against your touch.  In addition, you should always cook presentation side down first, which is contrary to your method/ideology.  This is a classic cooking style.  These tips are age-old methods of cooking that you have missed.  Sorry 🙁  But I just had to.  Don't get me wrong.  You have great ideas and tastes, and your presentation is great.  But you just missed a little on the method(s).
